Valentine's Dine in for Two

Valentine's day is fast approaching and it is one of the only times of the year that couples will sit down and enjoy a romantic meal together. Or it is for me anyway! I for one, enjoy cooking a special meal rather than eat out as more thought is put into the meal and it can be cheaper. The following 3-course meal recipes I have created are packed full of delicious flavours and protein, and are healthy. They are also easy to make and do not involve spending hours in the kitchen. Bonus!


The starter, stuffed Avocado, is simple to make, delicious in flavour and light enough to enjoy as a starter or a side dish. This recipe is flavoured with chilli, but you can always leave this out if you are not a fan of heat.

The main dish, Greek lamb with smoked Aubergine, is full of juicy, mediterranean flavours, complemented by the rich smokiness from the Aubergine.

The last dish (dessert) is based on one of my favourite puddings- melt in the middle pudding. This pudding is rich in flavour yet soft in texture, and just melts in the mouth. I bet your mouth is watering, right? Or is it just mine? A bonus to this recipe is that it takes less than 3 minutes to make and cook!


For the Starter- Stuffed Avocado

INGREDIENTS

1 large Avacado (Peeled, stoned and cut into half)

200g Red Kidney Beans

2 Tomatoes (Diced)

1 Green chilli (finely chopped)

1/2 Lime

75g Feta

Coriander

1/2 tsp of Cumin seeds


METHOD

Toast the cumin seeds in a pan on the hob, then add the Kidney beans, Tomatoes, Green Chilli, and Coriander. Crumble in the feta and lightly mix together.

Top the Avocados with the mix, sprinkle some extra Coriander leaves on top, and drizzle the zest of the lime over.

Serves 2

For the Main- Greek Lamb with Smoked Aubergine

INGREDIENTS

1 Aubergine

1/2 Lemon (Juiced)

1 Garlic Clove (Grated)

70g Baby Broad Beans (Boiled and drained)

2 Lamb Leg Steaks (Lean with all visible fat removed)

1/2tsp of Dried Oregano

3tbsp Greek Yoghurt


METHOD

Cook the Aubergine over a high heat for 7-8 minutes until soft and charred, making sure to turn occasionally throughout.

Mix half of the Lemon juice, half of the garlic, dried Oregano, and a little oil in a bowl.  Once mixed, use this to coat the lamb steaks.

Remove the skin of the Aubergine and mix the flesh with the left over garlic and yoghurt.

Cook the Lamb on a griddle for 5 minutes. Once the lamb is cooking, mix the rest of the Lemon Juice with the beans.

Divide the Aubergine mix onto two plates and place the cooked lamb on top. Scatter the bean mix around the side and serve.

For the Dessert- Melt in the Middle Pudding

INGREDIENTS

2 Eggs

2tsp Cocoa

2 scoop of  Chocolate Protein Powder

1 tsp Cinnamon

2tsp Coffee

Water

METHOD

Mix all the ingredients together, adding water until a smooth consistency is achieved. 

Split the mixture into two small jars and microwave each one for 60 seconds on high until the outside is cooked.
