We all love a takeaway now and then but did you realise that the 'sweet and sour chicken' can be up to 890 calories in a single serving? This recipe has had my mouth watering the whole time writing this, a recipe thats easy to follow and only 325 calories per single serving and serves 2-3 people.
What you will need:
- 3 chicken breasts, cut into pieces
- 1/2 teaspoon salt
- 1/2 teaspoons pepper
- 3 tablespoons flour
- 2 tablespoons toasted sesame oil
- 1 tablespoon MCT oil
- 2 garlic cloves, minced
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon brown sugar
- 1/2 cup low-sodium chicken stock
- 2-3 tablespoons toasted sesame seeds
Serve with: brown rice and green beans and/or broccoli
How to cook it:
Preheat oven to 400 degrees F. In a bowl, whisk together chicken stock, brown sugar, 1 tablespoon sesame oil, garlic cloves and soy sauce. Set aside.
Heat a large pan over medium-high heat. Mix chicken with salt, pepper and flour. Add MCT oil and 1 tablespoon sesame oil to the pan, and once hot, add chicken in a single layer. Cook until golden on one side, then flip and cook until golden again, about 2-3 minutes. Pour chicken stock mixture over top and mix to coat, then turn off heat. Place in an oven proof dish in the oven and bake for 20 minutes. Remove and cover with sesame seeds. Serve with brown rice and green beans.
